Ingredients for 4 people

8 eggs, 1 ‘Romano Mainelli’ salam d’la duja, 4 spoons of grated Grana, 4 spoons of chopped parsley, extra virgin olive oil, salt and pepper.

Preparation

Peel the salam d’la duja and cut in medium-sized morsels. Beat 8 eggs in a bowl, add Grana, cheese and parsley. Add salt and pepper. Brown the salami in a pan (diameter 28 cm approx.) with a little oil and then add the eggs when the pan is hot. Move the mix to allow the heat to spread evenly and then arrange the salami uniformly in the omelette. Lower the flame, cover and leave for 2 minutes. Turn the omelette to cook on both sides. To do so, you may use a big dish. Serve not searing hot, with fresh salad. This omelette was a traditional country snack in the Novara area.
