Pork dumplings with pancetta and plums
Ingredients for 4 people

8 slices of pork loin, 16 slices of ‘Romano Mainelli’ pancetta, 8 pitted dried plums, extra virgin olive oil, a clove of garlic, salt and pepper

Preparation

Beat the slices to make them thin and wide. Garnish with a slice of pancetta, a pinch of salt and pepper and a dried plum. Roll the slice and fix the roll with a toothpick. Cook in a pan with olive oil for ten minutes, make sure you turn the meat frequently. Remove from the flame and leave to cool. Wrap each roll in a pancetta slice, move the dumplings in a casserole and put it in a pre-heated oven, gratin mode, until the pancetta turns crunchy. Serve with a tasty mixed salad.
